Cook It Like It’s Hot is back in action and I’m stoked. I recently got back from Puerto Vallarta, Mexico and had the time of my life. I drank a lot of ‘beverages’ and ate a lot of amazing food. I am in love with spicy food, the hotter the better, so I was in spice heaven in Mehico. So, I thought it was only appropriate to do a Mexican themed cooking show. On this week’s episode I made Mexican rice and beef tacos with salsa. Now, I’m no Mexican but the food I created was so damn good. I hope all of you can experience that culture and enjoy it as much as I did. Until next time, WAKA WAKA! Gracias!

Mexican Rice (creative name, hey?)
-3 cups whole grain rice (3 cups water and 1 Tbls margarine)
-1/4cup diced green pepper
-1/4 cup diced white onion
-1 tbls finely diced jalapeno
-1/4 cup diced, seedless tomatoes
-1 tsp cilantro
-1/2 cup chicken broth/stock
-2 Tbls cumin
-S & P to taste
Beef Tacos (Again, the creativity was flowing through my veins!)
-Beef stir fry strips (I subbed pork for beef; you can use either, or chicken!)
-olive oil for cooking
-2 tbls margarine or butta (DO NOT use a stick of butta like Paula Dean would suggest)
-2 tsp chilli powder
-S & P to taste
Salsa (K, I need help)
-4 diced, seedless tomatoes (Roma tomatoes work great here)
-1 tsp diced jalapeno
-1/4 cup diced white onions (green onions would be fabulous as a substitute)
-Cilantro
-1 tbls olive oil
-S & P to taste
