Cook It Like It’s Hot is back in action and I’m stoked.   I recently got back from Puerto Vallarta,  Mexico and had the time of my life.  I drank a lot of ‘beverages’ and ate a lot of amazing food.   I am in love with spicy food, the hotter the better, so I was in spice heaven in Mehico. So, I thought it was only appropriate to do a Mexican themed cooking show.  On this week’s episode I made Mexican rice and beef tacos with salsa.  Now, I’m no Mexican but the food I created was so damn good.  I hope all of you can experience that culture and enjoy it as much as I did.  Until next time, WAKA WAKA! Mexican Rice (creative name, hey?)
-3 cups whole grain rice (3 cups water and 1 Tbls margarine)
-1/4cup diced green pepper
-1/4 cup diced white onion
-1 tbls finely diced jalapeno
-1/4 cup diced, seedless tomatoes
-1 tsp cilantro
-1/2 cup chicken broth/stock
-2 Tbls cumin
-S & P to taste

Beef Tacos (Again, the creativity was flowing through my veins!)
-Beef stir fry strips (I subbed pork for beef; you can use either, or chicken!)
-olive oil for cooking
-2 tbls margarine or butta (DO NOT use a stick of butta like Paula Dean would suggest)
-2 tsp chilli powder
-S & P to taste

Salsa (K, I need help)
-4 diced, seedless tomatoes (Roma tomatoes work great here)
-1 tsp diced jalapeno
-1/4 cup diced white onions (green onions would be fabulous as a substitute)
-Cilantro
-1 tbls olive oil
-S & P to taste

Episode 2-Breakfast For Dinner

Hey ya’ll!

So, we are back in action and couldn’t be more thrilled.  I guess i can only speak for myself!!  This weeks episode is all about breakfast with a dinner twist. 

 I’ll be making breakfast wraps with the eggs being the actual wraps.  Inside will be juicy chicken, buttery avocados, red ripe tomatoes, crisp red onion, and spicy jalapeno havarti cheese.   And what is breakfast without the refreshing balance of some kind of fruit.  Alongside the wraps, i’ll make a scrumptious watermelon salad complete with red onion,  crumbled feta, mint sprigs, and an oil and balsamic vinaigrette.

Breakfast Wraps

-2 eggs per person

-1 chicken breast per wrap

-avocado slices

-tomato slices

-jalapeno harvarti or pepperjack cheese

-salt and pepper

-ground cayenne pepper

-drop of milk for eggs

Watermelon Salad

-watermelon chunks

-crumbled feta cheese

-sliced red onion

-a few mint leaves

-oil

-balsamic vinegar

-salt and pepper

-juice of one lime

Hey friends,

We will be filming the next episode of Cook it like it’s hot very soon! YAY!  My favourite meal is breakfast: eggs, bacon, waffles, the whole shebang.  However, i never have time to make breakfast so i decided for next weeks episode to make breakfast for dinner.    Check it out.  It’s not what you’ll be expecting. :)

Cook it like it’s hot pilot video

Hey guys, so the very first video of Cook it like it’s hot is posted on YouTube and i could not be more excited.  This is the first video so we need to work on the details and whatnot, but i think it turned out pretty good.  I made ‘Spaghetti and Meatballs,’ simple i know but so very delish.  The meatball recipe was created by my  good friend, Aaron, and myself .  His contribution was the secret ingredient: seasoning salt (which is what makes these meatballs extra special).  They are delicious and turned out wonderful in the video.

Paul asked me to be apart of this project and I instantly said yes.  I love to cook and have always dreamed of being a Chef.  Obviously this is nowhere close to being a Chef but at least i still get to share my love of food.  I can’t wait to create more recipes and make more videos and see where this goes.  I hope you enjoy and don’t laugh to hard ;)

Spaghetti and Meatballs

1lb lean ground beef (you can sub for turkey or chicken if you’d like)

3 cloves minced garlic (+ or -  depending on your taste)

a handful of flat leaf parsley

a handful of Parmesan cheese

2-3 eggs

a handful of bread crumbs

2 Tlbs  Lawrys seasoning salt (Very Important!)

Spaghetti and Sauce of your choice

oil for cooking
